Located on Main Street in Park City, the Wasatch Brew Pub got its start when Greg Schirf, from Milwaukee, moved to Utah and created the state's first brewery; he called it Schirf Brewing Company in 1986. In 1989 Schirf Brewing Company opened its first pub on Main Street, which also became headquarters for the Schirf Brewing Company. Up until Schirf created Wasatch Beers, Utah had been a dry state; in 1988 Schirf proposed a bill to the legislature, which was passed, making brew pubs legal in the state of Utah.
After Schirf had paved the way for the brewing and selling beer, another brewing company popped up called the Salt Lake Brewing Company, their beer is called Squatters. Squatters and Wasatch beers became friendly rivals, competing for the state's reputation as the best tasting beer. In 2000 the two companies merged and formed a partnership, and called their new company Utah Brewers Cooperative. Wasatch Brew Pub and Squatters Pub Brewery are separate brewing and bottling plants; Squatters is owned by Peter Cole and Jeff Polychronis. Now there are 12 pubs in the state of Utah. The partnership has been successful, selling beer within the state of Utah and also to surrounding states.
The Wasatch Brew Pub serves full course lunch and dinner menus. If you are visiting Park City, Utah, be sure to stop in for a brew, and try out the menu. They serve pizza, buffalo burgers, barbecued baby back ribs, brats, New Zealand Lamb served with mint sauce, and much more. If fish and chips are more to your liking there is fresh Utah trout and salmon on the menu. The Wasatch Brew Pub is open every day from 11 a.m. to 10 p.m.
